Vegan Buffalo Chicken Wings Recipe

These delicious vegan chicken wings are made with a simple homemade seitan recipe (mostly just flour), and are so budget-friendly and tasty!

They are tossed in my homemade Vegan Buffalo Sauce (but use your favorite) and baked until golden brown.

My favorite part of this recipe is that anyone can make it–the main ingredient is all-purpose flour instead of vital wheat gluten, which can be harder to find.

It’s also much more affordable than store-bought fake meat products. They are usually the largest expense when grocery shopping, and it’s so much cheaper to make your own with this recipe!

INGREDIENTS:

  • All-Purpose Flour – You can also use bread flour which has an even higher amount of protein.
  • Water – Just plain, cool water to mix the flour with.
  • Vegetable Stock & Poultry Seasoning – The seitan wings will be boiled in these to start the first half of the cooking process, and to add tons of flavor! If you don’t have poultry seasoning, simply mix together as many of the following as you have: sage, thyme, rosemary, marjoram, nutmeg, garlic and onion powder.
  • Buffalo Sauce – Feel free to use your favorite sauce on the wings!

Vegetarian Boneless Seitan Wings

Making these vegetarian meatless wings does require some extra time. However, most of this time is actually just letting the homemade seitan rest or soak!

The process may seem involved, but you get used to it so quickly.

Then, you have an endless supply of a tasty vegan protein that is incredibly affordable and customizable!

I’ve been experimenting with so many vegan meats lately, such as my Vegan Mozzarella Sticks, Vegan Fried Shrimp, Vegan Bacon Bits, Tempeh Baked Bacon, Vegan Lentil Loaf, and my Baked Tofu Nuggets. Also try my BBQ Cauliflower Wings if you love this wing recipe.

I can’t even tell you how much money I’ve saved taking the extra bit of time to make these myself. I’m so excited for you to try them!

How to Make Vegan Chicken Wings

Making the Homemade Seitan

To start making your vegan seitan, mix together the flour and the water until a dough forms. Knead for 5-10 minutes until very smooth and elastic. Cover with cool water and rest for 2 hours.

Drain water and begin “washing” your flour: cover in water, then stretch and pull flour to release starch (cloudy water), then drain. Repeat 3-5 times. As you go, the thicker starchy bits will become smaller, just keep breaking them apart.

Once starchy bits are broken apart and water isn’t as cloudy, drain and rest 20 minutes. Stretch and squeeze out excess water.

Baking and Flavoring Plant Based Wings

Then, rip apart into small boneless wings (they will grow a bit while cooking), about 14 or so. Stretch as far as you can, and then tie into a knot or two. If you’re struggling, let the dough rest a bit longer.

Bring vegetable stock and poultry seasoning to a gentle boil over medium heat in a large pot. Add wings and reduce heat to low, simmering for 30 minutes. Remove from stock and preheat oven to 375F.

Arrange on a baking tray and bake for 25 minutes. Remove from oven and coat with buffalo sauce on both sides, then continue baking for 10 minutes.

Coat in more buffalo sauce and enjoy with my Vegan Ranch Recipe or your favorite dipping sauce!

STORING

These vegan wings are best served warm and I highly recommend you serve them fresh!

If you do have leftovers, I would reheat them in the oven until warmed through, and add more buffalo sauce as needed.

What is Seitan?

Seitan is simply wheat gluten, the protein in wheat that gives bread dough its elastic quality.

I originally thought it was a newer product, but it’s actually been used as a meat substitute for centuries in Asia!

It’s a unique meat substitute in that it actually has a very meat-like texture, while still absorbing the flavors of whatever you cook it in like other vegan meat alternatives.

The protein content is surprisingly high (as high as steak in some circumstances!), without any of the saturated fat and cholesterol. Also, making your own seitan from scratch (like in this recipe) means you don’t have to worry about any preservatives either!
