This vegan breakfast parfait is super quick to make, healthy, and full of probiotics!
It has a crunchy raw vegan granola, fresh berries, and yummy layers of vanilla and strawberry oat milk yogurt.
Some days I don’t have time to cook or prepare anything, so keeping this raw granola on hand and some yogurt in the fridge helps me have a quick breakfast ready.
You can really add anything you’d like to this parfait, which is what I love about it so much!
I went for an autumn-inspired combination of pumpkin seeds, goji berries, mulberries, dried cranberries, chocolate, cashews and blackberries.
How to Make Vegan Berry and Fruit Parfait
Making a healthy breakfast doesn’t have to be complicated, all you have to do for this parfait is stack the layers!
I started with strawberry oat milk yogurt, granola, vanilla yogurt, more granola and more strawberry!
I added another thin layer of vanilla and then packed on the granola and berries.
Even though this recipe is super simple and basic, it’s packed full of different flavors and textures and I just love making this in the mornings!
Fall Yogurt Gluten Free Granola Parfait
While fall usually means heavier and more comforting foods, I still love light and fruity meals, especially in the morning when I’m not super hungry.
I also love eating granola all year round, switching out the ingredients to match the season or whatever I’m craving.
This recipe would also be yummy with layers of mixed fresh fruits, chia or flax seeds or some pumpkin puree and pumpkin spice.
If you wanted to get a bit more creative with this, you could always add some homemade chia pudding, banana ice cream, or some oat-based freshly baked oat granola.

Vegan Breakfast Parfait
This simple, healthy and quick vegan breakfast parfait is perfect for busy mornings! With layers of vanilla and strawberry yogurt, granola and berries!
Ingredients
- Vegan Vanilla Yogurt
- Vegan Strawberry Yogurt
- Blackberries
- 1/4 Cup Pumpkin Seeds
- 1/4 Cup Cashews
- 2 Tbsp Goji Berries
- 2 Tbsp Mulberries
- 2 Tbsp Chocolate Chunks
- 2 Tbsp Dried Cranberries
Instructions
- Layer yogurt into a cup or glass.
- Add granola of choice (I used a mix of cashews, goji berries, mulberries, pumpkin seeds and dried cranberries.
- Add more yogurt, granola and a final layer of yogurt.
- Sprinkle more granola, blackberries and chocolate chunks on top, enjoy!

These parfaits look like dessert, but they’re breakfast! How awesome is that?! When you’re plant-based the typical morning bowl of oatmeal can get boring, this is such a delicious way to enjoy breakfast!
