With a moist, fluffy center and a slight crisp on the outside, these blondies are the perfect treat for anytime of the year.
They are so quick and easy to make and you only need one bowl to prepare the batter, which is great for a super fuss-free dessert!
I love this simple blondie recipe and I think they are so cute and inviting with the chocolate chips on top.
If you’ve never tried a blondie before, now is the time!They are just as rich and chewy as brownies, but without the cocoa, giving a stronger emphasis to the vanilla and brown sugar flavors of the dessert.
The added little chocolate chips give the blondies even more decadence, making them a sort of cookie and brownie hybrid!
Best Chocolate-Chip Blondie Brownies
I’ve always thought of blondies as more fluffy, fudgy chocolate chip cookies.
They are all about the molasses and brown sugar flavor, with a brownie consistency!
Blondies are great to pack into lunches or to take on trips – they hold up well and don’t fall apart easily.
If you really want to take these blondies over the top, serve them with some dairy-free vanilla ice cream on top, maybe even with some whipped cream and fudge sauce.
How to Make Vegan Blondies
Making the Blondie Batter
To make this super simple blondie recipe, start my preheating your oven to 350 degrees F.
Then add your melted vegan butter, brown sugar, vanilla and flax egg to a bowl and whisk until smooth.
The flax egg helps act as a binder for the batter, and also adds some moisture in place of an egg.
Then add your flour, baking soda and salt and mix until the batter comes together with no dry pieces showing.
Baking Vegan Blondies
Now you can add in your dairy-free chocolate chips and mix to incorporate them evenly.
Next you’ll want to spray an 8×8 pan with non-stick spray, and add a piece of parchment paper if you’d like.
This really helps to lift the blondies out of the pan once they’ve cooled a bit, so you can cut them into pieces easily.
It makes the process very simple instead of trying to cut them out of the pan, but you can skip the parchment if you’d like.
Pour the blondie batter into the pan and spread it out evenly.
I like to sprinkle a few more chocolate chips on top before baking! Then bake for 23-27 minutes, or until a toothpick inserted into the center of the blondie comes out clean.
Rich, Chewy and Fluffy Blondie Recipe
These blondies have just the best consistency – they are the perfect balance of chewy and dense, while still being moist and so flavorful.
Feel free to play around with the add-ins too, I love basic chocolate chips, but you could also use nuts, white-chocolate chips or just drizzle some peanut butter of fudge on top after baking.

Vegan Blondies
Easy and delicious vegan blondies with dairy-free chocolate chips! So rich, chewy and fluffy with a vanilla and brown sugar base!
Ingredients
- 1 1/3 Cup Flour
- 3/4 Cup Brown Sugar
- 1/2 Cup Vegan Butter, melted
- 1 Tsp Vanilla Extract
- 1/2 Tsp Baking Soda
- 1/4 Tsp Salt
- 1/2-3/4 Cup Vegan Chocolate Chips (+ extra to top)
- 1 Flax Egg*
Instructions
- Preheat oven to 350 degrees.
- Whisk together melted vegan butter, brown sugar, vanilla and flax egg until smooth.
- Add flour, baking soda and salt and mix until combined.
- Add chocolate chips and mix to evenly incorporate.
- Spray an 8x8 pan with non-stick spray and place a piece of parchment paper inside**.
- Pour blondie batter inside and spread out evenly. Add a few more chocolate chips to the top if you'd like, then bake for 23-27 minutes, or until a toothpick inserted into the middle of the blondie comes out clean. Enjoy!
Notes
*1 Tbsp Ground Flax mixed together with 3 tbsp water, let sit for 5 minutes to thicken.
**This makes removal very easy because you can just lift the blondies out of the pan once cooled, if you want you can just use the non-stick spray and scoop them out.
