Vegan Waffle Ice Cream Sandwich Recipe
These waffle ice cream sandwiches are deliciously creamy and sweet, and made with a homemade coconut milk ice cream and Van’s Waffles.
Waffles are more than just a breakfast food, and I love combining the sweet and crispy flavors with ice cream and other treats!
With their basic flavors, you can really combine them with anything, either fruity or chocolaty. For this recipe I show you how to use both!
I love the combination of blueberries and walnuts, not to mention the waffles are blueberry also!
The sweet vanilla flavors of the homemade ice cream match perfectly with these toppings, but you can also never go wrong with chocolate.
Delicious Waffles and Ice Cream Dessert
Waffles are a nutritious way to enjoy ice cream sandwiches at home, especially with homemade ice cream that you can completely control the sugar and fat content of!

How to Make Vegan Ice Cream Sandwiches
Making Coconut Milk Ice Cream
To make your homemade coconut milk ice cream, you’ll need an electric mixer or to mix with a whisk vigorously by hand.
Add coconut milk, coconut cream, vanilla, sugar and salt to a bowl and mix for 5-10 minutes, the longer the better!
Place inside a large pan, I used a 9×13, and freeze for 30 minutes; repeat 2-6 times. Finally let it freeze for six hours or overnight before scooping.
Filling and Topping Waffle Sandwiches
Heat your waffles according to their package, then add a scoop of your homemade ice cream and squish down with another waffle on top!
I like to cut my waffles in half to make them easier to eat, and also to share because they’re quite big!
I usually roll the outsides in nuts or chocolate chips, and then top with blueberries, melted chocolate or whipped cream!
It would also be cute to cut the waffles into even smaller pieces and roll in a variety of toppings for parties!
The ice cream does melt quickly though, so I typically let them thaw for maybe 5 minutes and enjoy right away.
Homemade Dairy-Free Coconut Ice Cream
You’re going to love this ice-cream-from-scratch recipe – it’s made with just five simple ingredients and takes just a bit of patience to make. It’s the perfect pairing with a variety of Van’s Waffles available at many local retailers.
If you have an ice cream maker it will be much more straightforward, but don’t worry if you don’t! You’ll just need to mix it up every 30 minutes or so anywhere from 2-6 times; the more times you do it the creamier the ice cream will be.
Just be sure you use a vanilla extract that has alcohol in it so the ice cream does not crystallize too much – you also want to cover the ice cream anytime you place it back inside the freezer.

Waffle Ice Cream Sandwich
Delicious waffle ice cream sandwich with a homemade vegan coconut milk ice cream, topped with chocolate, blueberries, walnuts and whipped cream!
Ingredients
- Van's® Gluten Free Blueberry & Power Grains® Original Waffles
- 1 Can Coconut Cream
- 1 Can Coconut Milk
- 2 Tsp Vanilla Extract (w. alcohol)
- 3/4 Cup Sugar
- Pinch Salt
- Chopped Walnuts
- Blueberries
- Vegan Chocolate Chips
- Vegan Whipped Cream
Instructions
- With an electric mixer or vigorously by hand, mix together coconut milk, coconut cream, vanilla, sugar and salt for 5-10 minutes, the longer the better.
- Pour into a 9x13 inch pan and place, covered, in the freezer to chill for 30 minutes. Repeat mixing and freezing intervals as many times as possible, preferable 4-5 times to get the creamiest ice cream.
- Finally, freeze covered overnight, or at least up to 6 hours before serving.
- Heat waffles according to package and add a scoop of homemade ice cream. Roll in nuts or chocolate chips and top with blueberries and whipped cream, according to preference!
