Sweet and Simple French Toast

This strawberry stuffed French toast recipe is a healthier version of such a classic breakfast.


Regular French toast was never my go-to breakfast, until I discovered how amazing it is with a filling!


The flavors of the warm and crispy bread, smooth creamy filling, sweet maple syrup and fresh mixed fruit – how can you not love it?


Strawberry Cheesecake French Toast

This recipe is very similar to a “Jammy Sammy” I had at a restaurant once. If you haven’t tried one it’s basically cream cheese and some sort of jelly cooked just like a grilled cheese – it’s amazing and you should definitely try it!


Now I know that most strawberry stuffed French toast recipes use cream cheese for the filling, which is always amazing, but this time I decided to change it up and use vanilla coconut milk yogurt!


It was so creamy and sweet, and as the French toast cooked the strawberries, they turned the yogurt pink and enhanced the vanilla-strawberry flavors so much.


I would highly recommend trying the yogurt option! 


I also used the yogurt as a frosting on top of my vegan French toast, and as a way to pile on a bunch of juicy fruit!


Making Vegan French Toast

This is really a pretty simple recipe, which is great because I think it looks more impressive than it really is!


Just mix your batter (let it sit a minute to thicken), and dip one side of your bread down and place that same side down on a non-stick or lightly oiled pan.


Try to use thicker bread that’s a few days old for best results.


Add a layer of yogurt, not too much or else it will ooze out while cooking, a single layer of strawberries, a dollop more yogurt and another piece of toast non-dipped side down.


Cook until golden brown, carefully flip and cook a couple more minutes, and that’s it!


I served mine with super ripe and delicious strawberries, bananas and kiwi.


It’s probably sweet enough as it is, but you can always drizzle on a bit of maple syrup if you’d like! I think a tiny bit really completes this dish.

Strawberry Stuffed French Toast
This vegan strawberry-stuffed French toast is perfect for breakfast. Filled with a creamy, strawberry and yogurt filling to liven up a classic dish!

Cook Time 10 minutes
Total Time 25 minutes


  • 4 Pieces Day Old Bread
  • 3/4 Cup Plant Milk (I used almond)
  • 3 Tbsp Unbleached All-Purpose Flour
  • 1 Tsp Vanilla Extract
  • 3 Tbsp Maple Syrup
  • 1/4 Tsp Cinnamon
  • Dash Nutmeg
  • Dairy-Free Yogurt (I used coconut milk)
  • Fresh Strawberries
  • Mixed Fruit to Top


  1. Combine milk, vanilla, syrup, cinnamon, nutmeg and flour in a bowl. Mix well.
  2. Dip one side of the bread into the flour mixture, and place on a non-stick (or lightly oiled) skillet flour side down.
  3. Spread yogurt on top of bread, followed by a single layer of strawberries, and a tad more yogurt.
  4. Take another piece of bread, dip one side in the flour mixture, and place plain side down onto other piece of bread.
  5. After a couple minutes and when the bottom becomes golden brown, carefully flip.
  6. Continue cooking for a coupe minutes until golden brown. Remove from skillet and serve with more yogurt, fresh fruit, and if you want it a little sweeter, a drizzle of maple syrup.
