Best Vegan Potato Taco Recipe

These easy potato tacos are super flavorful with all sorts of Mexican-inspired spices and flavors.


Seasoned potato cubes over a layer of vegetarian fried beans, and then topped with tomato, lettuce, cilantro, avocado and lime juice!


They’re ready in no time and make a ton of food (about 4-6 servings), and are also great as leftovers.

Easy Mexican and Vegetarian Tacos

When most people think of potato tacos, they usually imagine fried taco shells with mashed potatoes inside. While these are definitely delicious, I wanted to make a lower fat and healthier option without having to fry the shells.


You only need a bit of oil for this recipe to add some texture to the potatoes, but you could even use water or veggie stock if you don’t like using oil.


Most of my recipes are low oil but I found the amazing texture to be worth it!


These are still so savory and delicious with lots of seasonings and added flavors from the avocado, cilantro and lime.

How to Make Low-Fat Potato Tacos

Making these Mexican potato tacos is super simple, all you really need to prepare are the potatoes, then warm up the refried beans and chop up your toppings!


To make the potatoes, use the largest pan you have with high walls, and set it on medium heat with a splash of oil.


Cube your potatoes and add them to the pot, give them a good stir to evenly incorporate the oil.


Cook, covered and stirring occasionally, for 5-10 minutes or until they begin to become tender when poked with a fork.


Add a packet of taco seasoning (1 oz.), and continue cooking, uncovered, for another 5-10 minutes until they begin to crisp, stirring occasionally.

Warm up a can of vegan refried beans either in the microwave or over the stove – I used the 365 brand.


You could also make your own if you’d like, I love this fat free recipe.


After you finish cutting your tomatoes and avocadoes into bite sized pieces, and chopped your cilantro and lettuce, it’s time to assemble your tacos!

Start with a layer of the refried beans onto your tortillas, they act as a nice glue to hold everything together!


Most tortillas are already vegan, but a few contain milk. Just be sure to check the ingredients before you buy them if you are vegan or avoiding dairy.

Next add on some of the seasoned potatoes!

Finally, add all your colorful toppings and finish it off with some freshly squeezed lime juice, and that’s it!

I also added a bit of vegan cheese to my tacos, but some other toppings that would be great are red onion, vegan sour cream or corn!

These easy and delicious potato tacos are filled with seasoned potato cubes, vegan refried beans, lettuce, tomato, cilantro, lime, avocado and vegan cheese!



  1. Heat a very large pot with high sides over medium heat and drizzle some neutral oil inside*. Cube potatoes and add to a pan, stirring well to coat the potatoes with the oil.
  2. Cook, stirring occasionally, covered for about 5-10 minutes or until potatoes begin to soften when poked with a fork. Add taco seasoning and continue cooking, uncovered, for an additional 5-10 minutes or until they begin to brown.
  3. Heat can of refried beans in the microwave or over the stove. Add a layer to the bottom of your tortilla, follow by the potatoes and the remaining toppings.
  4. Serve warm!


*If you would like an oil free version, you can always use a splash of water or veggie stock to cook the potatose, but the potatoes will not brown as much. They will still be tasty though!
